I don't know why they're all female. In the Bible, angels are never portrayed as women. Not sure how it got changed around.

It's just a cultural thing. The "angels" we use have absolutely no connection to biblical angels. Biblical angels had no gender. Yes they had names that we now consider male, but that's because the stories were recorded in a heavily male-dominated society. Second, most angels weren't humanoid. Some were wheels within wheels, covered in eyes (Ezekiel 1:16), others were four headed beasts (Ezekiel 1:14) and those that actually had wings (Seraphim) had to use those six wings (yes, six) to cover up their bodies because their visage would destroy a human.
Basically, it's just because renaissance artists decided that women were more fun to paint, and everybody ran with it from there.
